If a recipe calls for a special liquor, OPTION-click on any bottle, and select the liquor from the popup menu that appears. Select the first ingredient in the popup menu or simply put the bottle away to restore its original ingredient. Hold down the OPTION-key when releasing a custom liquor bottle to retain the custom liquor.
